Wujiang tofu fish

Wujiang tofu fish is a special hot pot, and one of the top ten famous dishes of Xifeng. To make it, wild Leiocassis longirostris and chubs are selected from the Wujiang River. The scales are removed, the fish is cut into pieces and then marinated in oil, pepper, chillies and other condiments. Marinating takes more than half an hour due to the need to remove the fishy smell and add freshness, fragrance, tenderness and smoothness. At the same time, the tofu is cut and ground with Wujiang water into cubes, before being quickly boiled until dry. According to the tastes of the diners, hot pot condiments may be prepared. The marinated fish and tofu pieces are put in a pan to cook. As it is cooked, the dish becomes reddish in color, rich in animal protein and nutrients, and fresh in taste. It is easy to digest and absorb. The various flavors, such as spicy, clear soup, sour soup, slightly spicy and medium spicy, suit customers of different ages and tastes.
